Maple Parfait
This Historic Recipe of Maple Parfait comes to us from the “V – Victory Cook Book – St. Paul’s United Church, Sarnia Ontario” from the 1940s.
Ilah Irene Stokes was born on February 27 1898 to Robert and Wilhelmina (Watson) Stokes in Sombra Village, Lambton County, Ontario.
Ilah married Norman James Bury, the son of James C. and Rachel (Young) Bury. They lived on Stuart Street in Sarnia were Norman was employed by the Canadian National Railways. He worked there for 32 years.
They had one child, Robert James Bury, who was born on June 8 1922 in Sarnia. Robert attended Western University in London, Ontario before leaving for Edmonton, Alberta where he trained and became a General Surgeon. He spent his 50-year career at the Royal Alexandra Hospital.
Robert married Doris Patricia Armstrong on June 6 1950 in Edmonton, Alberta. Robert and Doris had two children; a boy and a girl.
Ilah passed away on Tuesday, March 4 1980 at Twilight Haven in Petrolia and was buried beside her husband Norman, who passed in 1952, at Riverside Cemetery, Sombra.
Ingredients
1 – teaspoon gelatine,
2 – tablespoons water
2 – eggs
1/3 cup maple syrup
A few grains of salt
½ pint whipping cream
Instructions
Dissolve over hot water, then add egg yolks and beat until light. Add maple syrup slowly beating all the time. Stir until slightly thickened. Cool. Add the stiffly beaten egg whites and salt and lastly the cream beaten until thick (but not stiff). Freeze in refrigerator tray until firm.
