King Edward Cake with Maple Icing

In anticipation of Watford’s 150th Anniversary we selected a recipe from “1906 – Tried and Proven Practical Household Recipes – Carefully Collated By The Ladies of Watford and Vicinity.” This recipe for 'King Edward Cake' was submitted by a Mrs. Lawrence and the recipe book in the Archives notes beside this recipe that it is "splendid". She also wrote in that the Maple Icing, also included in the recipe book, is a good pairing with it.
King Edward Cake:
- 1 cup brown sugar
- 1/2 cup butter, beat to a cream
- 1/2 cup sour milk
- 1 cup chopped raisins
- 1.5 cups flour
- 3 eggs, reserving white of one for icing
- 1/2 teaspoonful nutmeg
- 1/2 teaspoonful cinnamon
- 1 teaspoonful soda
Bake in a moderate oven.
Maple Icing:
- 1 cup soft brown sugar
- 3/4 cup maple syrup
Boil until it hairs, then stir into the beaten white of one egg, beat until cool enough to spread.
