January Soup
This Historic Recipe, January Soup by June Freeman, comes to us from “Our 125th Anniversary Cookbook” – Forest Baptist Church – Forest, Ontario. In 1996 the Forest Baptist Church celebrated their 125th Anniversary and as part of the celebrations they compiled many tried and true recipes which they published in the cook book.

Ingredients
1lb ground beef
3 small onions, sliced
16oz can tomatoes
Salt and pepper
6 cups water
3 medium carrots, sliced
3 medium potatoes, diced
3 celery stalks, sliced
2/3 cup macaroni
Instructions
Brown beef slightly. Add onions, salt, pepper, tomatoes and water. Bring to a boil. Cover and simmer 1 hour. Add vegetables and simmer 1 hour longer. Stir in macaroni during last 15 minutes.
Serve hot with crusty rolls or French bread. Makes 8 to 12 servings.
A teaspoon of sugar added with salt and pepper adds to the flavour. This soup is also good with ground chicken or ground turkey. Good on a cold day!
