This Historic Recipe, French Onion Soup by Serge Balduc, comes to us from Watford Carnegie Library Cook Book and Local History- 1913 – 2000.
Serge Balduc was the owner of Serge’s Pizza, was located on the Main St. (Nauvoo Rd) of Watford.

Ingredients
5 thinly sliced yellow onions
1 tbsp. oil
¼ tsp. sugar
2 qts. boiling beef or chicken stock
½ cup dry white wine
2 cups grated cheese – Swiss or mozzarella
3 tbsp butter
1 tsp salt
3 tbsp flour
Rusk
Instructions
Sauté onions slowly in butter and oil for 15 minutes. Stir in salt and sugar, cook for 30 minutes. Sprinkle in flour, stir. Blend in hot stock. Add wine and simmer for 30 minutes. To serve, pour soup into bowl, top with rusk and cheese. Melt cheese in oven. Serve.
