Corn Relish
This Historic Recipe of Corn Relish by Mrs. William Playfoot come to us from “Popular Recipes – Compiled by Shetland Women’s Institute” 1979 – second printing 1981.
Evelyn Lucille Parent was born in Bothwell, Ontario to parents Denis and Clara (Willer) Parent. Her step-father was Douglas Cutts.
Evelyn married William Albert Playfoot in 1954, who was the son of Albert and Emma (Rush) Playfoot. William was born in Florence, Lambton County in 1926.
Evelyn and William were the parents of one daughter and two sons. They eventually had four grandchildren.
They lived in Chatham until 1966 when they returned to Lambton County. Their home was built mainly by themselves with the help of their brother-in-law between 1974 and 1975.
William worked as a class “B” mechanic (bodyman). He then became an appraiser until he retired in 1991. Evelyn was a bookkeeper, then later had a business decorating cakes until the early 1990’s.
Evelyn passed away on Monday, June 16, 2014 at the St. Joseph’s Hospice, Sarnia at the age of 80. William had predeceased her at their home RR #4 Florence on Sunday, October 18, 2009.
They were both laid to rest in the Bothwell Cemetery, Kent County.
Ingredients
2 lg. onions, chopped
3 each red and green sweet peppers
2 cups white sugar
1 tbsp. dry mustard
Instructions
Combine all ingredients with ½ cup water in kettle. Cook 25 minutes and pack in sterilized jars.
