Carolyn Jamieson Cheeseburger Pie

Mary Carolyn Hamarcher was born on 13 February 1941. She married Charles Herman Jamieson and they resided in Thedford. Carolyn and Charles had four children.
Carolyn was a woman who wore many hats throughout her life. Carolyn was a young teacher who finished her career at S.C.D.I. while farming in Thedford. A lifelong politician, Carolyn was the Mayor of Thedford, the Deputy Mayor of Lambton Shores, and a Deputy Warden of Lambton County.
In retirement Carolyn opened CJ’s Sunrise Bakery where she introduced the world to her famous, date-filled oatmeal cookies. You could trade-in a book, hear a story, or share a laugh. Carolyn created the Thedford Soccer Club, enjoyed playing music, and of course, playing softball. Her love for reading inspired her to help build the Carolyn Jamieson Library in Thedford.
Charles passed away 25 July 1983, and Carolyn passed on 4 August 2022. They were laid to rest at Pinehill Cemetery, Thedford, Ontario.
Ingredients
1lb. ground beef1 cup onion (chopped)
½ tsp. salt
1 cup cheddar cheese (shredded)
1 cup milk
½ cup Bisquick biscuit mix
2 eggs
Impossible Cheeseburger Pie by Carolyn Jamieson
Cook beef and onion.
Drain and add salt.
Spread in a 9” greased pie plate.
Cover with cheddar cheese.
Mix milk and biscuit mix and eggs with a fork until blended.
Pour over meat and cheese.
Bake at 400 F for 25 minutes.
