Apple Pudding Cake
This Historic Recipe, Apple Pudding Cake by Jeanette Carpenter, comes to us from "Cooking Favorites of Moore Township” by the Minor Hockey Mothers in Corunna, Ontario.
Jeannette Marie Anne Quenneville was born in Windsor, Ontario on May 31,1947. She was the daughter of Alexander and Jennie (Sonta) Quenneville and was one of six children; she had two brothers and three sisters. While Jeanette was still young, the Quenneville family moved to Lambton County, first to Forest and later to Sarnia.
Jeannette married Donald Wilfred Carpenter on October 16, 1970 in Corunna. Donald was the son of Wilfred and Dorothy (Sheffer) Carpenter. He was born on April 28, 1943 in Bickford and was raised in Wilkesport.
After their marriage, Jeannette and Don made Corunna their home and they had two sons.
Jeannette devoted her life to her family. She enjoyed watching baseball and participating in various hobbies. Don worked for 42 years at Polymer/Bayer/Lanxess until he retired in 2006. He was an avid local and family historian. Some of his works were actually published, including two volumes of the Diary of James W. Carpenter 1880 – 1907.
They both loved traveling. In 2002 they moved to Sarnia. In 2016 they moved to Manitoba. Finally, in 2019, they moved to Abbotsford, British Columbia. No matter where they called home, they always found a Baptist Church in their community to attend and they made many lifelong friendships.
Don passed away in Abbotsford, B.C on April 5, 2023 and Jeannette passed away on June 18, 2024. They were both laid to rest at Moore Union Cemetery in Mooretown, Ontario.

Ingredients
1 Tbsp. butter
1 egg
1 c. sour cream
1 tsp. baking soda
½ tsp. vanilla
½ tsp. cinnamon
1 c. flour
2 c. pared and cubed apples
Instructions
Mix first 6 ingredients together. Flour apples in flour and cinnamon. Mix all together and bake at 375 degrees approximately 40 minutes.
